The 24-year-old student next to me   considered a leaf piled with spot prawn roe, like tiny orange pearls. We chewed on the sea eggs from off the coast of California, and I searched for any note of Fritos chips. <\/p>\n<p>\u201cMaybe,\u201d I replied. I tasted a hint of seawater but not much else. Four courses into a lengthy tasting menu and I was already woozy from the onslaught of flavors, textures, scents and dramatic plating.<\/p>\n<p>We were at the Paramour Estate in Silver Lake for <a class=\"link\" href=\"https:\/\/noma.dk\/la\/\" target=\"_blank\" rel=\"nofollow noopener\">Noma LA,<\/a> the most polemical event of the year for a global cohort of fine-dining restaurants and the people who obsess over them. <\/p>\n<p>           <video playsinline=\"playsinline\" loop=\"\" preload=\"none\" title=\"I tried the $1,500 Noma LA tasting menu. And over an afternoon of 16 courses and seven  wines, it tested every assumption and bias I\u2019ve ever had about fine dining at its peak expression.<\/p>\n<p>The time commitment? I was there for exactly 4 hours and 37 minutes.<\/p>\n<p>The price? Including a  beverage pairing, taxes, tip and valet: $1,500 per person. That comes out to $93.75 per course. <\/p>\n<p>You may be thinking: In this economy? A table in the center of the dining room is dedicated for communal dining.   <\/p>\n<p>There is a cultural divide that is rarely talked about. It\u2019s not liberal versus conservative.  Nor vegetarian versus meat eater. <\/p>\n<p>It is between people who can afford and are willing to spend several hundred dollars or more on a single meal versus those who find the concept  frivolous or even disdainful. I place myself  in the gray zone. <\/p>\n<p>Noma LA is more of an \u201cexperience\u201d performed by the people behind   a restaurant named <a class=\"link\" href=\"https:\/\/www.theworlds50best.com\/awards\/best-of-the-best\/Noma.html\" target=\"_blank\" rel=\"nofollow noopener\">best in the world five times<\/a> between 2010 and 2021. Redzepi, who opened Noma  in Copenhagen in 2003, is considered a culinary genius and a terrifying abuser. He <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-03-11\/rene-redzepi-stepping-away-noma-abuse-allegations\" rel=\"nofollow noopener\" target=\"_blank\">stepped back from the L.A. residency<\/a> after a <a class=\"link\" href=\"https:\/\/www.nytimes.com\/2026\/03\/07\/dining\/rene-redzepi-noma-abuse-allegations.html\" target=\"_blank\" rel=\"nofollow noopener\">news article<\/a> and <a class=\"link\" href=\"https:\/\/www.latimes.com\/0000019c-dec9-d7e7-afbf-dfd92f2e0000-123\" data-autoplayable-video=\"true\" rel=\"nofollow noopener\" target=\"_blank\">protest campaign<\/a> rehashed allegations of past abuses against employees, including withering humiliation rituals and physical taunts. <\/p>\n<p> Noma LA continues under the leadership of chef Pablo Soto until June 26.<\/p>\n<p>            <img class=\"image\" alt=\"Chef Pablo Soto during a team meeting at Noma LA, the pop-up at the Paramour Estate. \"   width=\"2000\" height=\"1330\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/04\/1777374324_297_.jpeg\" decoding=\"async\" loading=\"lazy\"\/>         <\/p>\n<p>Chef Pablo Soto, who now leads the pop-up after Ren\u00e9 Redzepi stepped away, says all forms of dining should be more expensive. \u201cSomeone somewhere is getting shorted.\u201d<\/p>\n<p>No protesters were present when I drove up to the gates.  I was offered cider  <a class=\"link\" href=\"https:\/\/www.theparamour.com\/\" target=\"_blank\" rel=\"nofollow noopener\">by the Paramour\u2019s pool<\/a>, then led around the building, taking in the spectacular view of downtown\u2019s skyline, to a greenhouse kitchen. Much of the staff had gathered, smiling and waving through the glass and entryway decorated with sunflowers, peppercorn branches, agave stalks and other local flora. I dutifully waved back.<\/p>\n<p>Our lunch would be California-centric yet sifted through Noma\u2019s legendary innovations and idiosyncrasies. Having not been to Noma or its <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/jonathan-gold\/la-fo-gold-noma-mexico-20170505-story.html\" rel=\"nofollow noopener\" target=\"_blank\">pop-ups in Mexico<\/a>, Japan or Australia, I was  a  blank slate. <\/p>\n<p>The ocean took the center of the meal. Our first course was fire-grilled Dungeness crab legs  in  a wreath of pink pepper branches.  A daylily flower stuffed with crab followed. Then chilled broth from  a deep-purple lobster tail. It was made with spongey barley dough, inoculated with koji spores. <\/p>\n<p>\u201cWe eat so much mold, all the time. Soy sauce, cheese, miso, huitlacoche, wine has mold, beer in some way,\u201d Soto later said. \u201cThe starch in this pancake becomes sweeter.\u201d<\/p>\n<p>Noma\u2019s effort to reflect California native or culturally relevant ingredients appeared  here and there: a loquat from the estate grounds, or a single   acorn with local sea urchin. <\/p>\n<p>  The servers insisted on calling mole, reflective of our state\u2019s Mexican Indigenous heritage, a \u201csauce.\u201d  But it looked and tasted like a mole, accompanied by  agave shoots, squash blossom, grilled mahogany leaf and an artichoke stalk for dipping. One got my thumb. This covered  paddles of  dethorned and <a class=\"link\" href=\"https:\/\/www.instagram.com\/reels\/DXR3s_-DVCS\/\" target=\"_blank\" rel=\"nofollow noopener\">pickled tacinga cactus<\/a>, adorned with honeypot ants. <\/p>\n<p>It didn\u2019t do much for me, but I  saw my dining mates were enjoying it. A few said they\u2019d never eaten cactus. I shared that I have <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-01-15\/green-juice-nopal-daniel-hernandez-tangy-jugo-cactus\" rel=\"nofollow noopener\" target=\"_blank\">cactus in my green juice<\/a> every morning. They\u2019d never heard of that either.<\/p>\n<p>This turned out to be part of the process of the meal. Seeking familiarity in the unfamiliar, submitting to the show, challenging ourselves. But a thought kept nagging at me: $1,500.<\/p>\n<p>I\u2019ve attempted in  my reporting life to understand  subcultures  on  their own terms. But the fine-dining world has  been the most challenging for me.  Sure, it\u2019s an art form, yet it takes a lot of effort to not see much of it as pure indulgence.<\/p>\n<p>Redzepi\u2019s reputation <a class=\"link\" href=\"https:\/\/madfeed.co\/2015\/08\/19\/culture-of-the-kitchen-rene-redzepi\/\" target=\"_blank\" rel=\"nofollow noopener\">as a bully<\/a> is synonymous with the excesses of the fine-dining kitchen brigade system. Times restaurant <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-03-10\/noma-jenn-harris-critic-controversy-industry\" rel=\"nofollow noopener\" target=\"_blank\">critics declined to attend<\/a> the pop-up. <\/p>\n<p>At our table, Phang didn\u2019t put much stock into the Redzepi controversy. He\u2019d managed to snag a reservation, paid his $1,500 and drove down from the Bay Area. Because he lives for this.<\/p>\n<p>\u201cLots of people are very close-minded about fine dining,\u201d Phang said. \u201cThey think of food as sustenance, and don\u2019t appreciate the art of it. For me, there\u2019s just something about trying to make something the best that it could be that I really like.\u201d<\/p>\n<p>Noma LA was a flash point  even before the New York Times <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-03-07\/noma-abuse-allegations-rene-redzepi-pop-up\" rel=\"nofollow noopener\" target=\"_blank\">reexamined the Redzepi abuse<\/a> allegations. Its price for many locals came across as out of touch. Neighborhood restaurants  struggle to stay afloat in L.A. Yet here come Noma\u2019s army of cooks, foragers and fermenters to tell us how to eat our own food?<\/p>\n<p>Redzepi and team <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2025-07-01\/why-rene-redzepi-chose-los-angeles-for-next-noma-pop-up-residency\" rel=\"nofollow noopener\" target=\"_blank\">spent months in Southern California<\/a> to form the menu. The operation employs about 100 staff, most  flown in from Denmark and provided with housing and schooling for  their kids.  About 25 people were hired locally. At least 25 nationalities  are represented, said Soto, a native of Mexico City who became chief of Noma\u2019s kitchen two years ago.<\/p>\n<p>Redzepi told The Times that despite how outrageous the price per seat may sound, the whole project would <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-01-12\/noma-los-angeles-1500-dollars\" rel=\"nofollow noopener\" target=\"_blank\">barely break even<\/a>. And that was before the awkward exits of <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-03-10\/noma-la-pop-up-sponsors-cancel-amex-resy\" rel=\"nofollow noopener\" target=\"_blank\">American Express and other sponsors.<\/a> <\/p>\n<p>            <img class=\"image\" alt=\"Noma LA chef Pablo Soto.\"   width=\"2000\" height=\"3073\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/04\/1777374334_742_.jpeg\" decoding=\"async\" loading=\"lazy\"\/>          <\/p>\n<p>\u201cI struggle to think that there\u2019s any restaurant that is charging what they are supposed to charge for food,\u201d said Soto.<\/p>\n<p>Meaning all dining should be more expensive?<\/p>\n<p>\u201c100%,\u201d the chef said. Noma insists on paying a living wage, paying interns (after previously not doing so) and codifying a three-day weekend for staff, without exception.<\/p>\n<p>All of this costs resources, he noted, because in most fine restaurants, \u201csomeone somewhere is getting shorted in the system. Someone is paying the price. Maybe the animals are getting shorted! So I think we are in the process of discovering, how can we make this better?\u201d<\/p>\n<p>If all that is the case, who in the end is an experience like Noma LA really for? <\/p>\n<p>Certainly, it\u2019s for rich people.  Hollywood mogul Ari Emanuel had a birthday here, <a class=\"link\" href=\"https:\/\/pagesix.com\/2026\/04\/13\/hollywood\/inside-superagent-ari-emanuels-star-studded-birthday-party-at-controversial-la-hotspot\/\" target=\"_blank\" rel=\"nofollow noopener\">Page Six Hollywood<\/a> reported, and Elon Musk was among the guests.<\/p>\n<p>But it\u2019s also for people like Anthony Phung, a 22-year-old doctoral student in bioengineering. He said one of his goals in life is to eat at all the world\u2019s  three-starred Michelin restaurants.  <\/p>\n<p>\u201cIt\u2019s a dream,\u201d Phung said. \u201cI\u2019m not into cars or expensive hobbies. And by the time the last dessert arrived \u2014 a fortune cookie of chocolate mousse from Chiapas wrapped in a fern leaf \u2014 I couldn\u2019t point to a single bite that tasted  truly extraordinary. At least not in comparison to what L.A. has to offer.<\/p>\n<p>Nothing as consistently mind-blowing as the milpa salad by F\u00e1tima Ju\u00e1rez at Komal ($10.50), or the <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-04-09\/maydan-market-west-adams-top-ten-dishes-bill-addison\" rel=\"nofollow noopener\" target=\"_blank\">tlayuda with moronga<\/a> by Alfonso \u201cPoncho\u201d Martinez at Lugya\u2019h ($25), or a <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/list\/best-birria-and-barbacoa-tacos-los-angeles-101-tacos-guide#p=lamb-barbacoa-taco-at-barbacoa-ramirez\" rel=\"nofollow noopener\" target=\"_blank\">single barbacoa taco<\/a> by Gonzalo Ramirez at his family\u2019s sidewalk puesto in Arleta ($3).<\/p>\n<p>As the meal concluded, I felt my company credit card practically burning in my pocket, and left with one   central question: Is this worth it?<\/p>\n<p>\u201cI actually appreciated the transparent pricing,\u201d said Richardson, 35. \u201cI do think it was worth it. I\u2019m going to remember that meal for the rest of my life. I\u2019m very thankful I can personally spend money on something like this.\u201d<\/p>\n<p>Certain people will pay for a Noma experience, or fume that it even exists, no matter the price. And after tasting it myself, it feels like I\u2019ve now been admitted into some happy, self-satisfied  cult.
