(Tom Fox / Staff Photographer)

The menu features Tex-Mex classics such as chicken enchiladas, fajitas and tacos. It incorporates Mexican dishes such as Acapulco shrimp cocktail and chile relleno, along with American dishes such as chicken fried steak or grilled ribeye steak and fries.

One of Campo Verde’s classics used to be the queso with chips, a product that diners either loved or hated because of its greenish color, consistency and the fact that no one knew what was in it.

Now, with the touch of an international chef like Benhamacht, the queso contains a blend of three different cheeses and poblano chile. There are two more variations that include Bandido chorizo cheese and cowboy brisket and hatch cheese.

Diners enjoy lunch in the newly reopened Christmas-themed Tex-Mex restaurant Campo Verde on W Pioneer Parkway in Arlington, June 17, 2025. (Tom Fox / Staff Photographer)

“The queso is a hot topic of conversation because of the history of the restaurant,” said Benhamacht. “So, we decided we wanted to make it the way we envision it: fresh, real ingredients, made in-house. And so far, it’s been a success.”

Campo Verde will hold a tasting on June 28 to decide which queso will remain on the menu.

True to its style and heritage, Campo Verde will continue with its Christmas theme throughout the year. This summer, there are between 40,000 and 50,000 twinkling lights on the walls and ceiling amid Christmas decorations.

The nachos with braised chicken are served with a Reposado Paloma drink at Campo Verde, the newly reopened Christmas-themed Tex-Mex restaurant on W Pioneer Parkway in Arlington, June 17, 2025.
