The designer has made his mark on restaurants about town, including <a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/lilia\" target=\"_blank\" rel=\"nofollow noopener\">Lilia<\/a>,\u00a0<a href=\"https:\/\/www.timeout.com\/newyork\/bars\/public-records\" target=\"_blank\" rel=\"nofollow noopener\">Public Records<\/a> and <a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/oxomoco\" target=\"_blank\" rel=\"nofollow noopener\">Oxomoco<\/a>, so much so that he earned a James Beard nomination for his rustic take on Brooklyn\u2019s <a href=\"https:\/\/www.coloniaverdenyc.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Colonia Verde<\/a>. Maddy crossed paths with chef Jackie Carnesi along the way, which makes sense, as he led the build-out at Nura and the recent revamping of <a class=\"editor-rtfLink\" href=\"https:\/\/www.timeout.com\/newyork\/news\/a-first-look-at-the-newly-reopened-kelloggs-diner-in-williamsburg-092324\" target=\"_blank\" rel=\"nofollow noopener\">Kellogg\u2019s Diner<\/a>, both kitchens she helmed. And now that Maddy and his partner, Marisa Maddy Ripo, turned a new, industrial build in Williamsburg into something that\u2019s entirely beautiful, feminine and warm, Carnesi has come along for the ride. Here are four things to know about <a class=\"editor-rtfLink\" href=\"https:\/\/www.barsusanne.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Bar Susanne<\/a>.\u00a0<\/p>\n<p><img decoding=\"async\" id=\"a0139256-d6a0-2ac8-a724-70bfc28eb74c\" class=\"photo lazy inline\" loading=\"lazy\" data-component=\"lazy-embed\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/05\/1778795236_631_image.webp\" alt=\"Interior of Bar Susanne\" data-caption=\"| Bar Susanne\" data-credit=\"Photography courtesy of Lorenzo Bongiovanni\" data-width-class=\"\" data-image-id=\"106405078\"\/>&#13;<br \/>\nPhotography courtesy of Lorenzo Bongiovanni| Bar Susanne&#13;<\/p>\n<p><strong>The project comes from a personal place for the design team.<\/strong><\/p>\n<p>Bar Susanne, and its sister cafe next door, Cafe Susanne, is named after one of Maddy\u2019s mentors, Susanne Greene. A second mother to Maddy, Greene was also an artist and ceramicist in New York. Using her spirit as an energy for the place, Greene\u2019s feminine and artistic influence is certainly felt as the space is defined by hand-grooved and textured walls, rust marble and a warming glow thanks to amber lighting. The logo takes from her, too, recreated from a sculpture she made, which she referred to as \u201ca fish person.\u201d Maddy also incorporated works from his mother, Barbara Chapman, who is also an artist,\u00a0as her prints hang around the dining room.<\/p>\n<p><img decoding=\"async\" id=\"480243b5-695d-ccb6-a041-64e0e084f9fa\" class=\"photo lazy inline\" loading=\"lazy\" data-component=\"lazy-embed\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/05\/1778795237_984_image.webp\" alt=\"Trout roe dish\" data-caption=\"| Trout Roe\" data-credit=\"Photograph: Delia Barth\" data-width-class=\"\" data-image-id=\"106405079\"\/>&#13;<br \/>\nPhotograph: Delia Barth| Trout Roe&#13;<\/p>\n<p><strong>Jackie Carnesi is back in the kitchen, this time, working with some of New York\u2019s finest seafoods.<\/strong><\/p>\n<p>Carnesi\u2019s flexibility in the kitchen is certainly something to be admired, as she churned out freckled naan and za\u2019atar-spiced baby back ribs at Nura and made flat nachos and fried slices of Texas Toast a thing for breakfast (or anytime) at <a class=\"editor-rtfLink\" href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/kelloggs-diner\" target=\"_blank\" rel=\"nofollow noopener\">Kellogg\u2019s Diner<\/a>. She is doing it again, but this time with seafood, sourcing from Long Island&#8217;s North Fork and various New York waterways.\u00a0\u00a0<\/p>\n<p>But, true to form, she doesn\u2019t just shuck a few shells and call it a day. Her shrimp cocktail comes with two sauces for dipping: a chipotle aioli and a shrimp aioli with shrimp shells fashioned right in. The razor clams could be eaten like shooters or delicately disassembled as the thin shoots hold slices of charred spring onion, a lightly sweet and spicy passionfruit aguachile and twee cubes of hibiscus jam. \u201cFish + Chips\u201d gets the Spanish treatment, as lemony-slick anchovies find themselves in bowls of chips, smeared with an herby salsa verde and dollops of aioli. <\/p>\n<p>As for entrees, you could find yourself back on land with a roasted half chicken or a dry-aged burger (a burger which Carnesi wishes she could\u2019ve made at Kellogg\u2019s Diner). Or you can stick to the seas with a fluke Milanese with sauce gribiche.<\/p>\n<p><img decoding=\"async\" id=\"9b8a3d23-88a3-da03-0585-d5c9db71f0c2\" class=\"photo lazy inline\" loading=\"lazy\" data-component=\"lazy-embed\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/05\/1778795237_445_image.webp\" alt=\"Two dollops of ice cream in a oyster shell\" data-caption=\"| &quot;Oyster Shooters&quot;\" data-credit=\"Photograph: Delia Barth\" data-width-class=\"\" data-image-id=\"106405080\"\/>&#13;<br \/>\nPhotograph: Delia Barth| &#8220;Oyster Shooters&#8221;&#13;<\/p>\n<p><strong>The desserts lean into the theme (and are just as fun). \u00a0<\/strong><\/p>\n<p>Carnesi\u2019s playful nature extends to the dessert menu with a fish-shaped galette that swims with strawberry\u00a0scales.
