When eggs are labeled as organic, grade AA or cage-free, you might be wondering what those terms actually refer to. And beyond labels, what\u2019s the reason behind why eggs come in a range of colors? Hint: it\u2019s not their nutritional value.<\/p>\n<p>Yes, eggs are an <a href=\"https:\/\/www.usatoday.com\/story\/life\/food-dining\/2024\/02\/18\/what-is-the-healthiest-protein\/72370008007\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">excellent source of protein<\/a>. And on top of that, they contain a bunch of essential micronutrients, such as choline. So, during your next trip to <a href=\"https:\/\/www.usatoday.com\/story\/life\/health-wellness\/2024\/11\/15\/how-much-protein-is-in-an-egg\/75891029007\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">the grocery store<\/a>, what\u2019s there to consider when purchasing eggs? We asked a dietitian to break it down.<\/p>\n<p>How much protein in an egg? How many calories in an egg?<\/p>\n<p>A <a href=\"https:\/\/fdc.nal.usda.gov\/food-details\/748967\/nutrients\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">standard large egg<\/a> contains around 74 calories, 6 grams of protein, 5 grams of fat and less than 1 gram of carbs, according to the USDA Food Data Central. Eggs are a good source of vitamin A, <a href=\"https:\/\/www.usatoday.com\/story\/life\/health-wellness\/2024\/11\/20\/what-does-biotin-do\/75900383007\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">biotin (vitamin b7)<\/a> and antioxidants like lutein and zeaxanthin, says Alison Kane, a registered dietitian and wellness program manager at Mass General Brigham. One of the most beneficial micronutrients found in eggs is choline; it\u2019s especially important during pregnancy, as it\u2019s a nutrient that\u2019s key for fetal development, she says.<\/p>\n<p>One large egg contains 207 milligrams of dietary cholesterol, the majority of which is concentrated in the egg yolk, says Kane. Through <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0002916525002539?via%3Dihub4\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">recent research<\/a>, we now know that the dietary cholesterol found in eggs is much less of a concern than previously thought. If you\u2019re worried about your cholesterol levels, it\u2019s more important to turn your attention toward your intake of saturated and trans fats (which eggs contain very little of), she says.<\/p>\n<p class=\"related-link\"><strong style=\"margin-right:3px\">Are boiled eggs good for you? <\/strong><a href=\"https:\/\/www.usatoday.com\/story\/life\/health-wellness\/2025\/05\/24\/are-boiled-eggs-good-for-you\/83678593007\/\" rel=\"noreferrer nofollow noopener\" target=\"_blank\">Here&#8217;s what experts have to say.<\/a><\/p>\n<p>What\u2019s the difference between white eggs and brown eggs?<\/p>\n<p>Let\u2019s set the record straight: The real reason why eggs come in a variety of colors \u2013 brown, cream, white or speckled \u2013 isn&#8217;t related to <a href=\"https:\/\/www.usatoday.com\/story\/life\/health-wellness\/2025\/05\/24\/are-boiled-eggs-good-for-you\/83678593007\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">their nutritional value<\/a>. Ultimately, it comes down to the breed of the hen that laid the egg, says Kane.<\/p>\n<p>It\u2019s also worth noting the color of the egg yolk isn\u2019t usually reflective of an egg\u2019s nutritional content, Kane says. One might assume eggs with more of an orange tint might have more nutritional benefits, but it&#8217;s not always tied <a href=\"https:\/\/www.usatoday.com\/story\/life\/health-wellness\/2025\/07\/11\/what-is-cinnamon-good-for\/84364930007\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">to an improvement in health<\/a>, she explains. \u201cIt\u2019s more so the type of feed that the birds are fed,\u201d she says.<\/p>\n<p class=\"related-link\"><strong style=\"margin-right:3px\">Noted: <\/strong><a href=\"https:\/\/www.usatoday.com\/story\/life\/health-wellness\/2025\/06\/30\/how-long-do-hard-boiled-eggs-last\/84326703007\/\" rel=\"noreferrer nofollow noopener\" target=\"_blank\">How to safely store boiled eggs in the fridge, according to food safety egg-sperts<\/a><\/p>\n<p><strong>What do egg carton labels refer to?<\/strong><\/p>\n<p>The labels on egg cartons can clue you in to the quality of eggs you\u2019re purchasing, the environments in which the hens live in, and the feed they\u2019re provided. Here\u2019s what you need to know:<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Grade AA.<\/strong> This letter grade refers to the quality of the egg. There are lots of factors used to determine whether an egg should be labeled grade AA, A or B, such as how clean the shell is, <a href=\"https:\/\/ask.usda.gov\/s\/article\/What-is-an-Air-Cell-in-Eggs#:~:text=This%20is%20the%20air%20space,larger%20as%20an%20egg%20ages.\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">the air cell size<\/a>, the egg yolk\u2019s shape and size and the egg white\u2019s consistency, <a href=\"https:\/\/www.ams.usda.gov\/sites\/default\/files\/media\/Egg%20Grading%20Manual.pdf\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">per the USDA<\/a>.<\/li>\n<li><strong>Organic. <\/strong>In order for a carton of eggs to receive an \u201corganic\u201d label, the hens\u2019 feed has to meet the USDA\u2019s National Organic Program standards, says Kane, meaning the feed needs to contain a sufficient level of nutrients.\u00a0They must also be provided an outdoor space to roam.<\/li>\n<li><strong>Cage-free<\/strong>. Self-explanatory; the hens producing the eggs aren\u2019t kept in cages, and have access to roam in an indoor environment, says Kane. However, the space that the hens inhabit could sometimes be quite small and subject to overcrowding.<\/li>\n<li><strong>Free-range.<\/strong> The hens have access to roam in an outdoor space, says Kane. However, there\u2019s a grey area around how much time they spend indoors versus outdoors.<\/li>\n<li><strong>Pasture-raised<\/strong>.
