Managing partner Adonis Graham, who worked at Pub Fiction in Houston before he opened “an adult Dave and Busters” named FAO HTX, moved to Dallas to create Darlin’ with Luke.<\/p>\n
Darlin’ has a “bar chef,” the title for cocktail creator Bronson Guti\u00e9rrez. He shows some of his chef skills with a margarita called the Cucumber Kiss ($13) made with tequila sous vide in the kitchen with cucumber and mint.\u00a0<\/p>\n
Guti\u00e9rrez’s favorite cocktail is the pickle martini, and it pairs with chef Ronald\u00a0Von Hatten’s “Million Dollar” Club ($18), he said: Rather than get a pickle spear on the plate, the martini does the job. The club sandwich is piled high with ham, turkey, bacon, fontina and more. Get duck fat fries ($10) on the side for the ultimate Darlin’ dinner, the bar chef said.<\/p>\n
Luke said he wants Darlin’ to be known for its dirty martini.<\/p>\n
“We want to tell everybody we\u2019re the dirtiest,” he said. Darlin’s olive brine is made in-house.<\/p>\n
