Beyond retail stores like\u00a0Tecovas, Rancher Hat Bar and McKinney Hat Company, a new bar and restaurant called Stay\u00a0Darlin&#8217; is the latest spot for cowboys and cowgirls.<\/p>\n<p>Call her Darlin&#8217; for short. The restaurant has elements of West Texas, Fort Worth, Aspen and Dallas, said founder Brandon Luke. The walls feature cowboy hats and taxidermied deer. Dallasites who remember the former <a href=\"https:\/\/www.dallasnews.com\/arts-entertainment\/2012\/04\/27\/at-sissys-southern-kitchen-and-bar-fried-chicken-that-rocks-and-a-whole-lot-more\/\" data-link=\"native\" class=\"\" rel=\"nofollow noopener\" target=\"_blank\">Sissy&#8217;s Southern Kitchen<\/a> at this address might feel some of its Southern-chic style, though Darlin&#8217; is more of a stay-all-night bar.\u00a0<\/p>\n<p>The restaurant is designed to offer &#8220;a slice of Texas,&#8221; Luke said, even though it&#8217;s in an urban area.<\/p>\n<p>The menu does not go heavy on Texas classics like chicken-fried steak or burgers, as might be expected. Customers can find those next door at <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/07\/09\/dudleys-sports-bar-open-henderson-ave-dallas-hibiscus\/\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">Dudley&#8217;s Sports Grill, a bar<\/a> that&#8217;ll share customers with Darlin&#8217;. Owned by separate restaurateurs who are college friends, the two spots are leaning in to the boot-scooting trend on Henderson.<\/p>\n<p>&#8220;We want to be that unplanned night,&#8221; Luke said. &#8220;You come for happy hour, you\u2019re having so much fun, you stay for dinner.&#8221;<\/p>\n<p>Managing partner Adonis Graham, who worked at Pub Fiction in Houston before he opened &#8220;an adult Dave and Busters&#8221; named FAO HTX, moved to Dallas to create Darlin&#8217; with Luke.<\/p>\n<p>Darlin&#8217; has a &#8220;bar chef,&#8221; the title for cocktail creator Bronson Guti\u00e9rrez. He shows some of his chef skills with a margarita called the Cucumber Kiss ($13) made with tequila sous vide in the kitchen with cucumber and mint.\u00a0<\/p>\n<p>Guti\u00e9rrez&#8217;s favorite cocktail is the pickle martini, and it pairs with chef Ronald\u00a0Von Hatten&#8217;s &#8220;Million Dollar&#8221; Club ($18), he said: Rather than get a pickle spear on the plate, the martini does the job. The club sandwich is piled high with ham, turkey, bacon, fontina and more. Get duck fat fries ($10) on the side for the ultimate Darlin&#8217; dinner, the bar chef said.<\/p>\n<p>Luke said he wants Darlin&#8217; to be known for its dirty martini.<\/p>\n<p>&#8220;We want to tell everybody we\u2019re the dirtiest,&#8221; he said.
