Quer\u00e9taro is a highland charmer. Nuevo Le\u00f3n is the country\u2019s muscular northern colossus. Campeche, a verdant beauty. Everywhere I go in this country, I find new wonders. Then I visited Colima, and it hit me that Mexico is an endless cornucopia that will never vanquish a traveler\u2019s curiosity.<\/p>\n<p>Never heard of button-sized Colima? Don\u2019t fret. A lover of Mexico may be vaguely aware of its important port at Manzanillo, or the state\u2019s spectacular <a class=\"link\" href=\"https:\/\/volcano.si.edu\/volcano.cfm?vn=341040\" target=\"_blank\" rel=\"nofollow noopener\">volcano complex<\/a>. Otherwise, Colima is not commonly on visitors\u2019 radar. The tourism industry is consistently ranked among Mexico\u2019s smallest.<\/p>\n<p>Yet it is a refreshingly contained and relaxed culture, with foods that are only found here. The depth of its riches are laid out in an ambitious recent series of culinary <a class=\"link\" href=\"https:\/\/www.colimasabe.com\/libros\" target=\"_blank\" rel=\"nofollow noopener\">guidebooks<\/a> by a group called <a class=\"link\" href=\"https:\/\/www.colimasabe.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Colima Sabe<\/a>.<\/p>\n<p>      <a class=\"link\" href=\"https:\/\/www.latimes.com\/food\/story\/2026-06-24\/summer-restaurant-guides-los-angeles-mexico-city-london-paris-tokyo-hong-kong-melbourne\" rel=\"nofollow noopener\" target=\"_blank\">           <img class=\"image\" alt=\"If You Go\"   width=\"510\" height=\"161\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/06\/1782295938_217_.png\" decoding=\"async\" loading=\"lazy\"\/>    <\/a>        <\/p>\n<p class=\"infobox-description\">Use these handy dining guides for all of your summer travel, near and far.<\/p>\n<p>The state has international airports in Manzanillo and Colima, which you might call Burbank-sized, largely serviced by connecting flights from Mexico City. Weekend travelers also come in by road from Guadalajara. There is a smattering of mid-tier or boutique hotels in central Colima or the nearby village of Comala, and a few resort hotels in Manzanillo. It is tart, crisp and infinitely cooling for tropical temperatures. Embrace the \u201ccompuesta\u201d style: tuba poured over ice and adorned with crumbled nuts and ruddy red fruit chunks, turning the liquid pink. El Camell\u00f3n de la Tuba, a well-known stand near central Colima, made the best that I tasted on my visit. Earlier this year, he moved La Sal (Colima\u2019s coastal lagoons produce <a class=\"link\" href=\"https:\/\/www.eluniversal.com.mx\/menu\/por-que-es-mas-saludable-la-sal-de-colima\/\" target=\"_blank\" rel=\"nofollow noopener\">excellent salt<\/a>) to a plot directly on a beach facing the Pacific. The restaurant makes refined regional favorites like ceviche colimense and his tostada de pozole seco, and mixes cocktails with tuba. The white-walled <a class=\"link\" href=\"https:\/\/www.instagram.com\/casarangelmx\/\" target=\"_blank\" rel=\"nofollow noopener\">Casa Rangel<\/a> is Mej\u00eda\u2019s power-meeting magnet for internationally inspired local fare. Not too far away, Mej\u00eda\u2019s partner Melissa Santamaria Mora runs an excellent bakery called Santamaria. These are restaurants on par with any you\u2019d see in Guadalajara or Mexico City. * La Sal Playa,  Avenida L\u00e1zaro C\u00e1rdenas 797, Playa Azul las Brisas, 28217 Manzanillo, <a class=\"link\" href=\"https:\/\/www.instagram.com\/lasalplaya_\" target=\"_blank\" rel=\"nofollow noopener\">@lasalplaya_<\/a> <\/p>\n<p>Sip the prizewinning beers of Cervecer\u00eda de Colima            <img class=\"image\" alt=\"Colima, Mexico - March 22,2025: A Colima Cero on a table at a restaurant\"   width=\"2000\" height=\"3000\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/06\/1782295945_159_.jpeg\" decoding=\"async\" loading=\"lazy\"\/>         <\/p>\n<p>Cervecer\u00eda de Colima is one of Mexico\u2019s most acclaimed breweries.<\/p>\n<p>(Daniel Hernandez\/Los Angeles Times)<\/p>\n<p>Winner of the Copa Cerveza M\u00e9xico 2025 for <a class=\"link\" href=\"https:\/\/www.cervezamexico.com\/cdmx\/resultados-de-la-copa-cerveza-mexico-2025-2\/\" target=\"_blank\" rel=\"nofollow noopener\">best large brewery<\/a>, Cervecer\u00eda de Colima has been my go-to for quality, consistency and innovation since I first tasted its pale ale, the <a class=\"link\" href=\"https:\/\/cerveceriadecolima.com\/collections\/cerveza-paramo\" target=\"_blank\" rel=\"nofollow noopener\">P\u00e1ramo<\/a>. I\u2019d hold it against any other in this style. Over the years, I\u2019ve found that just about everything Cervecer\u00eda de Colima brews is satisfying. I\u2019ve enjoyed the session IPA called Piedra Lisa, the bright pilsner Colimita, and the brewery\u2019s recent entrant in the nonalcoholic market, Colima Cero. The headquarters just outside Colima city offer tastings, and in February, co-founder Esteban Silva and his team opened a taproom in the city called Estaci\u00f3n Colimita. Those familiar with Mexican literature will recognize the name matching the fictional town in Juan Rulfo\u2019s 1955 novel \u201c<a class=\"link\" href=\"https:\/\/groveatlantic.com\/book\/pedro-paramo\/\" target=\"_blank\" rel=\"nofollow noopener\">Pedro P\u00e1ramo<\/a>,\u201d the groundbreaking book that  Gabriel Garc\u00eda M\u00e1rquez <a class=\"link\" href=\"https:\/\/lithub.com\/gabriel-garcia-marquez-on-the-magic-of-juan-rulfo\/\" target=\"_blank\" rel=\"nofollow noopener\">said inspired<\/a> his magical realism masterpieces. The connection is coincidental, yet a certain air of enchantment hangs over Comala\u2019s cobbled streets and tiled rooftops. According to Silva, who lives near Comala, the restaurants worth noting here are <a class=\"link\" href=\"https:\/\/www.instagram.com\/cuaxiote\/\" target=\"_blank\" rel=\"nofollow noopener\">Cuaxiote<\/a>, <a class=\"link\" href=\"https:\/\/www.instagram.com\/delasuerte.cafe\/\" target=\"_blank\" rel=\"nofollow noopener\">De La Suerte<\/a>, and Hacienda Pascual Nogueras with chef <a class=\"link\" href=\"https:\/\/alandecolima.mx\/\" target=\"_blank\" rel=\"nofollow noopener\">Alan Ramos<\/a>. In Colima city for coffee and a nice meal, visitors should bookmark Puerto Caf\u00e9 and <a class=\"link\" href=\"https:\/\/www.instagram.com\/_cumbree\/\" target=\"_blank\" rel=\"nofollow noopener\">Cumbre<\/a>, a restaurant and bakery that stands out in a scene of growing maturity and ambition. * Cuaxiote, Degollado 81, Centro, 28450 Comala, <a class=\"link\" href=\"https:\/\/instagram.com\/cuaxiote\/\" target=\"_blank\" rel=\"nofollow noopener\">@cuaxiote<\/a><\/p>\n<p>Bite into Colima\u2019s iconic pozole seco            <img class=\"image\" alt=\"Pozole seco is Colima's signature regional dish.\"   width=\"2000\" height=\"3000\" src=\"https:\/\/www.europesays.com\/us\/wp-content\/uploads\/2026\/06\/1782295948_954_.jpeg\" decoding=\"async\" loading=\"lazy\"\/>         <\/p>\n<p>Pozole seco is Colima\u2019s signature regional dish.<\/p>\n<p>(Daniel Hernandez\/Los Angeles Times)<\/p>\n<p>It is Colima\u2019s most famous regional specialty: all the ingredients and most of the preparation of a traditional white pozole, only without the liquid that makes it a stew. Its origins are uncertain, with <a class=\"link\" href=\"https:\/\/mexiconewsdaily.com\/lifestyle\/food\/state-by-plate-colima-cuisine\/\" target=\"_blank\" rel=\"nofollow noopener\">one tale suggesting<\/a> that a cook at Manzanillo\u2019s mercado left a pot of pozole over fire and forgot it. When she returned to find the broth dried out, the lore is the cook slathered the remaining mass of meat and hominy on a tostada, and pozole seco was born. Find it at the local markets, cenadur\u00edas, comedores, and the sit-down restaurants that ring Colima city\u2019s central plaza, such as Ramos\u2019 new \u00a1Aqu\u00ed Es Colima! * Aqu\u00ed Es Colima! The archaeological zone sits right beside urbanized Colima. At the former hacienda community Nogueras near Comala, an <a class=\"link\" href=\"https:\/\/sic.cultura.gob.mx\/ficha.php?table=museo&amp;table_id=1067\" target=\"_blank\" rel=\"nofollow noopener\">impressive museum<\/a> features historical and archaeological artifacts, and the restaurant Pascual mentioned above. The museum holds ceramics of a dog from ancient times that is <a class=\"link\" href=\"https:\/\/nhm.org\/stories\/colima-dogs\" target=\"_blank\" rel=\"nofollow noopener\">native to Colima<\/a>, similar to Mexico\u2019s more well-known native hairless dog the xoloitzcuintle. Colima\u2019s tlalchichi breed is similar, with shorter legs.
