First, the University Heights space was slated to become a <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/adams-avenue-beer-garden-opening\/\" target=\"_blank\" rel=\"noopener\">German biergarten<\/a> (it didn\u2019t.) Then, Collin Corrigan hoped he could open it as a <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/jetty-restaurant-bar-ocean-beach-opening\/#:~:text=New%20Updates%20On%20That%20Brewpub%20on%20Adams%20Avenue\" target=\"_blank\" rel=\"noopener\">cross-border brewpub<\/a> earlier this spring (he couldn\u2019t). But at long last, Una M\u00e1s will open on Friday, August 1.<\/p>\n<p>Corrigan founded <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/best-things-to-do-in-baja-right-now-according-to-local-experts\/#:~:text=of%20Cerveceria%20Transpeninsular-,Cerveceria%20Transpeninsular,-Though%20Valle%20can\" target=\"_blank\" rel=\"noopener\">Ensenada\u2019s Cervecer\u00eda Transpeninsular<\/a> in 2016, and was a former partner in El Cruce+241 in Chula Vista before <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/brewjeria-company-chula-vista-opening\/\" target=\"_blank\" rel=\"noopener\">Brewjeria Company<\/a> took over the concept. To get Una M\u00e1s over the finish line, he enlisted some high-profile names in the local food and drink scene. He tapped Danny Romero (one of the <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/food-news\/dante-and-danny-romero-acquire-the-lions-share\/\" target=\"_blank\" rel=\"noopener\">new owners of The Lion\u2019s Share<\/a>) and Ian Ward (<a href=\"https:\/\/sandiegomagazine.com\/food-drink\/restaurant-review-ponyboy-point-loma\/\" target=\"_blank\" rel=\"noopener\">Ponyboy<\/a>, <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/addison-becomes-san-diegos-first-3-star-michelin-restaurant\/\" target=\"_blank\" rel=\"noopener\">Addison<\/a>) of Service Animals to consult on menu development with executive chef Real Coronado. Coronado has worked in restaurants <a href=\"https:\/\/sandiegomagazine.com\/features\/visiting-tijuana-guide-2025\/\" target=\"_blank\" rel=\"noopener\">in Tijuana<\/a> (Casa de Coronados, Savage) and San Diego, including with Romero at his pop-ups Tortoise, Two Ducks, as well as Wormwood and Ponyboy.\u00a0<\/p>\n<p>Along with Geoff Hill (co-founder of Baja Bound Insurance) and creative consultants Jeff Lozano and Danny Goycoolea (<a href=\"https:\/\/www.instagram.com\/overpourmedia\/\" target=\"_blank\" rel=\"noopener\">OverPour Media<\/a>), Una M\u00e1s\u2019s team is a hodgepodge of top-tier San Diego and <a href=\"https:\/\/sandiegomagazine.com\/features\/valle-de-guadalupe-baja-california-things-to-do\/\" target=\"_blank\" rel=\"noopener\">Baja California talent<\/a>. That\u2019s precisely what\u2019s going to make it stand out, says Lozano.\u00a0<\/p>\n<p>\u201cThese particular players, at this particular time, in this particular neighborhood, with this particular idea, are really what sets it apart from any other spot in <a href=\"https:\/\/sandiegomagazine.com\/things-to-do\/north-park-things-to-do\/\" target=\"_blank\" rel=\"noopener\">North Park<\/a>,\u201d he says.\u00a0<\/p>\n<blockquote class=\"instagram-media\" data-instgrm-permalink=\"https:\/\/www.instagram.com\/reel\/DMN8worpx1R\/?utm_source=ig_embed&amp;utm_campaign=loading\" data-instgrm-version=\"14\" style=\" background:#FFF; border:0; border-radius:3px; box-shadow:0 0 1px 0 rgba(0,0,0,0.5),0 1px 10px 0 rgba(0,0,0,0.15); margin: 1px; max-width:540px; min-width:326px; padding:0; width:99.375%; width:-webkit-calc(100% - 2px); width:calc(100% - 2px);\"\/>\n<p>Una M\u00e1s\u2019 menu features Ensenada-style cuisine, specifically emphasizing a lot of fresh seafood. Romero wanted to take it one step further. \u201c[<a href=\"https:\/\/www.instagram.com\/theserviceanimals\/?hl=en\" target=\"_blank\" rel=\"noopener\">Service Animals<\/a>] had been simmering on a concept that was a playoff of Taco Bell\u2014like an elevated Taco Bell,\u201d Lozano explains. They took familiar favorites, like Taco Bell\u2019s signature nachos, and kicked them up a notch using premium ingredients and preparation techniques. Other items include an escabeche pickle dip, coconut and tomatillo aguachile, and various <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/28-of-the-best-vegetarian-and-vegan-restaurants-to-try-in-san-diego\/\" target=\"_blank\" rel=\"noopener\">vegan\/vegetarian<\/a> and gluten-free items.\u00a0<\/p>\n<p>Despite the playful twist, Corrigan emphasizes the menu will be a serious representation of the best of Baja. \u201cIt\u2019s still very, very much Ensenada-style food, with a couple dishes that have a fun spin,\u201d he promises. There are also 20 taps featuring <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/best-breweries-san-diego\/\" target=\"_blank\" rel=\"noopener\">San Diego craft beers<\/a> and <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/best-baja-california-breweries\/\" target=\"_blank\" rel=\"noopener\">Baja breweries<\/a>, plus NA beers, ciders, kombucha, agua frescas, and <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/valle-de-guadalupe-wineries\/\" target=\"_blank\" rel=\"noopener\">wines from Valle de Guadalupe<\/a>. A coffee counter will be open daily starting at 7 a.m. as well. Once open, Una M\u00e1s will offer lunch and dinner service, and will launch a brunch program on Saturdays and Sundays a few weeks after opening.\u00a0<\/p>\n<p>\u00a0\u201cThe full intention of this business is to provide a <a href=\"https:\/\/sandiegomagazine.com\/food-drink\/20-top-family-friendly-restaurants-in-san-diego\/\" target=\"_blank\" rel=\"noopener\">family-friendly<\/a>, community-driven, hyper-local establishment where people can gather, enjoy food and libation sustainably, and have your family and your pets there and enjoy what we know down south of Mexico and what we all know in San Diego,\u201d says Corrigan.\u00a0<\/p>\n<p>Una M\u00e1s opens at 2611 Adams Avenue on Friday, August 1. I don\u2019t have advice on how to juggle it all, but one that did catch my eye is Kevin Smith\u2019s Comic-Concerts at <a href=\"https:\/\/goodnightjb.com\/sandiego\" target=\"_blank\" rel=\"noreferrer noopener\">Good Night John Boy<\/a> in Gaslamp. The director-writer-actor known for \u201990s pop-culture classics like Clerks, Chasing Amy, Dogma, and Mallrats is throwing <a href=\"https:\/\/www.instagram.com\/p\/DMQ0mhipzMt\/\" target=\"_blank\" rel=\"noreferrer noopener\">three events over two nights<\/a>, starting with Archie Meets Jay &amp; Silent Bob Live! On Thursday, July 24, followed by Jay Mewes: The Ghosts of Comic Cons Past! and Hollywood Babble-On on Friday, July 25.
