In May, three men walked into the restaurant and allegedly left him battered on the floor.\u00a0<\/p>\n<p>Since then, Rodriguez and <a href=\"https:\/\/fwtx.com\/eat-drink\/second-coming-fuego-burger\/\" target=\"_blank\" aria-label=\"Link opens in new window (his wife Christie)\" rel=\"noopener\">his wife Christie<\/a> have been holding the place together\u00a0the only way they know how \u2014 by cooking through it. With their son Alex by their side and a loyal community showing up in force, the family has kept the grill going. But behind the counter, there are sleepless nights, mounting medical bills, and the kind of pain that lingers long after the bruises fade.\u00a0<\/p>\n<p>\u201cI can\u2019t run food. I can\u2019t help them cook or clean or anything,\u201d Rodriguez says. \u201cI sit here and answer the phone. That\u2019s all I can do right now.\u201d\u00a0<\/p>\n<p>He can also at times work the counter and cash register.<\/p>\n<p>The Rodriquez family\u00a0never asked for a GoFundMe. They didn\u2019t want to make a fuss. Instead, they opened their doors each morning and got to work, flipping burgers and prepping food\u00a0into the early hours. Most nights, they don\u2019t leave until 3 a.m.\u00a0<\/p>\n<p>There\u2019s no slowing down.<\/p>\n<p>\u201cWe\u2019re only open eight hours,\u201d Rodriguez says, \u201cbut we\u2019re here 12 to 15 hours a day.\u201d The beef is never prepped ahead of time. Nothing is left sitting. The temperature has to be just right. Every patty is made fresh, even if that means grinding, forming, and seasoning the meat after closing.\u00a0<\/p>\n<p>Still reeling from the altercation, Rodriguez and his wife are\u00a0in the grips of the aftermath, only four weeks after the incident. \u00a0<\/p>\n<p>It began, police say, with a water bottle one customer, later identified as 24-year-old Nehemiah Green of DeSoto, didn\u2019t buy there. Rodriguez says he asked Green to throw it away. The restaurant doesn\u2019t permit outside drinks. The exchange turned hostile. Minutes later, fists were flying.\u00a0<\/p>\n<p>Rodriguez re-injured a\u00a0knee that was once fractured in a motorcycle wreck years earlier. A visit to the emergency room ruled out a break, but his doctor has since ordered a battery of tests. A sonogram ruled out a blood clot. An MRI will help determine whether surgery is needed. With no health insurance, every procedure is another out-of-pocket expense.\u00a0<\/p>\n<p>\u201cWe had insurance, but it was over $1,000 a month,\u201d Rodriguez says. \u201cNow we pay straight out of pocket.\u201d\u00a0<\/p>\n<p>He hesitates to talk about it. \u201cI don\u2019t feel right doing something like a fundraiser. There are people who deserve help for better reasons.\u201d \u00a0<\/p>\n<p>The mounting costs, however, have the family reconsidering help.<\/p>\n<p>Regardless of the outcome, Carlos stands by his handling of the situation. \u00a0<\/p>\n<p>\u201cIt\u2019s not like I cussed him out,\u201d he says. \u201cI just said, \u2018Hey, just so you know, we don\u2019t allow outside food or beverage. There are two signs on the door. Obviously, you didn\u2019t read them.&#8217;\u201d He offered Green the option to finish it or toss it \u2014 a standard courtesy. But Green got agitated.\u00a0<\/p>\n<p>\u201cSo, OK,\u201d Carlos recalls, \u201cyou\u2019re going to refuse to follow my rules \u2014 why should I treat you nice?\u201d\u00a0<\/p>\n<p>Things unraveled fast. The men began shouting not just at Carlos, but at other customers. Christie went\u00a0to the kitchen to back up orders and started packing the men&#8217;s\u00a0food to go.\u00a0<\/p>\n<p>\u201cIt wasn\u2019t until they started yelling at a customer that I stepped in again,\u201d Rodriguez says. \u201cI reminded them I\u2019d already spoken to them about the water bottle.\u201d One of the men demanded a refund. Carlos refused. A party of regulars walked in. Tensions escalated.\u00a0<\/p>\n<p>\u201cI lost my cool,\u201d he admits. \u201cThey were trying to scare our customers off, shouting trash, making a scene. So, yeah, I told them they had to go.\u201d When Carlos stepped between the men and his guests, it turned physical. \u201cOne guy had me in a chokehold. When I tried to get free, I twisted my knee \u2014 the same one I had surgery on after a motorcycle wreck seven years ago.\u201d\u00a0<\/p>\n<p>The Rodriguezes\u00a0have been in the restaurant game for a long time. But nothing like this had ever happened \u2014 not in six years at Fuego Burger, not at their first spot down the road, and not in their worst imagination.\u00a0<\/p>\n<p>\u201cWe\u2019ve had people get upset before,\u201d Christie Rodriguez says. \u201cBut you never think someone\u2019s going to swing at you.\u201d\u00a0<\/p>\n<p>Carlos Rodriguez still replays it in his head. \u201cI\u2019ve thought about it 100 times. I should\u2019ve taken it outside,\u201d he says. \u201cI wasn\u2019t trying to make a scene in front of my customers. It just happened fast.\u201d\u00a0<\/p>\n<p>He knows the cost, not just physical, but personal.\u00a0<\/p>\n<p>\u201cWe\u2019re private people,\u201d he says. \u201cWe didn\u2019t want to be on the news. But people started asking questions. We wanted to set the story straight.\u201d\u00a0<\/p>\n<p>Police later confirmed the men were arrested and are facing charges.\u00a0<\/p>\n<p>\u201cThe lead detective told me, \u2018You could\u2019ve punched him in the face and thrown him out, and you still wouldn\u2019t have been in the wrong,\u2019\u201d Rodriguez recalls. But that wasn\u2019t what he wanted. He didn\u2019t want to fight.
