Swedish chef Björn Frantzén – the only person in the world to achieve three Michelin stars for three restaurants simultaneously – will open two restaurants in Australia’s Crown Resorts.
The move, together with Frantzén Group, will see premium dining concepts brought to both Crown Sydney and Crown Perth in 2027.
Frantzén’s three Michelin star restaurants are Frantzén in Stockholm, Zén in Singapore, and FZN in Dubai. Known for his innovative fusion of Nordic heritage, Asian influences, and French technique, his Australian ventures will draw on this legacy while embracing local produce and culture.

In Sydney, Én by Björn Frantzén will be a sky-high fine-dining experience with views across Sydney Harbour. Set to open early next year, the restaurant will join Crown Sydney’s lineup which includes Nobu, Woodcut, a’Mare, and Golden Century. Further details, including more on the concept and menu, will be revealed in the coming months.
In Perth, Brasserie Astoria will open in 2027 within Crown Towers in a space that has never before been seen by the public.
Frantzén says Australia has long been on his radar for its incredible produce and vibrant food culture.
“Crown Sydney and Crown Perth offer the perfect stage to bring our vision to life, and I’m excited to share our culinary philosophy with a new audience,” says Frantzén.

Crown Sydney Chief Executive Officer Ken Janssen says they are thrilled to welcome Björn Frantzén to Crown Sydney.
“Én represents a groundbreaking new era in Australian dining, and we are honoured to host a chef of Frantzén’s calibre,” says Janssen.
“Guests won’t need a passport to experience this truly world-class immersive experience that reflects his signature style.”
Crown Perth Chief Executive Officer Brian Pereira says Brasserie Astoria continues the strong investment in Crown Perth and expansion of their range of offerings which range from casual meals at the Urban Food District to elevated fine dining.
“We’re confident that sophisticated Perth and travelling diners will embrace one of the world’s best restaurants in one of the world’s leading hotels.”
Frantzén Group’s venture with Crown Resorts follows the announcement that Victor Churchill is coming to Crown Melbourne in 2027 with a steak restaurant overlooking the Yarra.
In Perth, Brasserie Astoria will be the biggest investment in the Crown property in a decade, joining the recently opened premium wine bar Gladstones, and the Urban Food District which features nine new dining venues and bars.
