I have an instant (automatic?) water heater and a shower stall in my bathroom. It seems impossible to take a shower in which I set the desired temperature with the dial on the right at the beginning, and then I do not have to touch the temperature dial again. I get 10-30 seconds to warm or hot water, and then it goes to cold. My landlord speaks German as a second language and explained through Google Translate that this is normal and the water heater cuts the heat when it gets to 50°. I do I take a normal shower that doesn’t involve constantly fiddling with the temperature dial, or turning of the sprayer when the water gets cold?

There can be many such issues causing this.
1. The water heater is too old and has lime buildup causing it to malfunction.
2. The settings are set up wrong (cranked up all the way ain’t it all the time)
3. Your shower has a piece of plastic between shower head and hose which causes a lower flow of water. Many of those heaters can’t function properly if they don’t have enough water flow thus keep shutting off.
No. 3 should be easy to validate for you. Try turning up your faucet and your shower and see if you can achieve consistent temp.
First hint I have is to turn the left handle in the shower all the way so you have full pressure, even if it doesn’t feel different. That includes pressing the button to make it rotate further. I have much better results that way. The shower thing has an thermostatic thing that should keep the temperature constant but it can go into a kind of feedback cycle with the heater which then leads to the heater switching off.
Also try setting the heater a bit lower than max.
you set the max temperature at the boiler. you set the desired temperature in the shower.
