A traveling showcase of Spanish cuisine is making its way back to San Antonio. After stops in Germany, Tokyo, and Switzerland, Spain Fusion will make an all-day stop at Pearl on October 17 with tastings, panels, and a chance to meet some of the world’s best chefs.
This is the fourth time that the event — part trade show, part food fest — has landed in San Antonio. While it is geared toward hospitality professionals, the organizers release a few tickets to the public each year.
Many of the products on display hail from the Canary Islands, home to two of San Antonio’s sister cities, Santa Cruz de Tenerife and Las Palmas. Guests can nibble on tuna, buttery cheeses, and Iberian ham paired with Spanish wines and a variety of mojos (sauces). Many of the vendors are new to the Texas market.

Spain Fusion also gives locals a chance to hobnob with some of the country’s most distinguished chefs. Juanlu Fernández, Luis Roger, and Xosé T. Cannas, all helming Michelin-starred restaurants, will offer tips and stories behind their signature dishes.
The day is divided into a daytime agenda and an evening agenda. From 11:30 am- 6 pm at Hotel Emma, guests can join educational sessions on Spanish food and wine—tastings included, naturally. Then, from 7 pm-10 pm outside at the Cellars Pavilion by Pearl Park, guests can network, watch demonstrations, and snack on passed bites and beverages. Attendees are welcome to come and go throughout both sessions.
The immersive food & wine experience, hosted by Spanish multimedia firm Vocento, is free, but requires an RSVP. Public passes are limited to 21 and up and will be allotted on a first-come, first-served basis.
