San Antonio’s La Cantera Resort & Spa is celebrating Christmas early with a holiday-themed pool party on July 17 and the unveiling of a full slate of seasonal activations, including a special appearance from Netflix chocolatier Gonzo Jimenez. To those who think it’s too early to start decking the halls, we say, bah humbug.
The resort will be going all out for the 2025 season, starting November 21. In addition to its full slate of winter events like the annual tree lighting, La Cantera will convert its Topaz pool into Jingle Bell Roll — a festive roller skating rink featuring twinkle lights, favorite carols, and holiday goodies. (Yes, roller skating — not ice skating.)
Then, on December 1-6, celebrity chef Jimenez from Netflix’s hit show Bake Squad will be in residency for Jingle and Joy: A Chocolate Holiday, a week of sweet activities and dining events. The Argentinian chocolate master will pose for photos, whip up sweet treats for dinners at Signature, Primero Cantina, and SweetFire Kitchen, and build a replica of the famous saddle shop at King Ranch with the hotel’s executive pastry chef, Erica Casares.

Those wanting to amp up their Christmas break to Elf-levels of cheer can also reserve one of Topaz’s cabanas. Each will be outfitted with cozy group seating, merry decor, and a curated menu featuring Yuletide favorites.
The sparkly cabanas will be on display during the Evenings at Topaz Jingle in July pool party on July 17. The 21-and-up bash will preview the coming attractions with Noel nibbles and an appearance from Santa Claus. Hopefully, La Cantera will let him borrow some board shorts instead of his usual fur-lined togs.
Locals who want to get a jumpstart on the most wonderful time of the year can take advantage of a 72-hour flash sale through July 18. Guests can use code DJNGL25 to unlock discounted rooms starting at $279 for reservations booked for November 1 through December 30.
In late May, La Cantera Resort debuted a $40 million makeover, reviving the guest rooms with a chic new look inspired by King Ranch. The Calera, a new 5,600-square-foot weddings and events venue, should also be finished by the time holiday travelers are ready to lace up their skates.
